Here’s another slow cooker recipe that will leave you with plenty of leftovers. I had a ham bone with a little bit of meat left on it in the freezer from the holidays and I knew exactly what I was gonna use it for. But if you don’t have one, you can always get one from the store! I waited for those extra cold days in the forecast to take out the slow cooker for this. This is yet another throw altogether and let it cook slow for 8 hours kind of recipe. And, let me say, it’s simply delicious and filling!
As I got towards the last few servings of this Black Bean Soup, I also wanted to use some of the leftover food in the fridge before it went to waste. I served this over a bed of massaged kale, tossed a spoonful of this with a chopped salad, something like my Everything Chopped Salad with all the veggies, ate this over my favorite bed of steamed broccoli like this simple Easy Garlic Broccoli recipe, and it was all so good. I’d imagine this would make for a fun rendition of nachos too! It doesn’t have to be just soup that’s for sure.
I like to keep my Black Bean Soup pretty simple because I love the flavors of the black beans and ham to really come through. Everything else just gives it a little oomph but if you want more spicy, feel free to add some of your favorite hot sauce or cayenne pepper. You can also add more color varieties of bell pepper too. Top with some avocado, fresh tomatoes, onion, or even some crumbled queso fresco cheese and you’re good to go!
