TUNA MELT

Homemade tuna melts taste a heck of a lot better than any restaurant out there. Part of the reason is because you can control what goes in your tuna salad, made with real ingredients, and prevent it from being super greasy. It’s really easy, even more so when you make a big batch of tuna salad to last you a few days ahead. If you’re looking to try a non-traditional version that won’t leave your taste buds hanging you have to try my Tuna Salad recipe. It’s slightly sweet with butter pickles and tangy from pepperoncini’s.

My version of a tuna melt is packed with fiber along with all that protein which is a happy pairing for the digestive system. I love using Alvarado Bakery’s Sprouted Flax Seed Bread because it’s low carb, high protein, and high fiber with just 100 calories for two slices. That leaves you some room to indulge with your favorite cheese for the tuna melt!

If you’re looking to go all out on the homemade end, feel free to try my Homemade Mayonnaise that only requires a few ingredients and a couple minutes to make with a standing mixer. For a healthy mayo it can be expensive so making it at home has its rewards at times. Feel free to use your favorite cheese, personally I love a sharp white cheddar that’s aged 2 years. It goes well with my version of a tuna salad. Enjoy!

Instructions
  1. Spread the mayonnaise on one side of both slices of bread.
  2. Warm a skillet on medium heat.
  3. Place one slice of bread with the mayo side facing down and place a layer of tuna salad on top. Top that with the spinach followed by the grated cheese. Carefully transfer it to the hot skillet and then place the other slice of bread on top with the mayo facing up.
  4. After a couple of minutes gently flip the tuna melt with a spatula and cook for about another two minutes.
  5. Remove from the skillet and slice in half on the diagonal.

TUNA SALAD

Let’s step away from the traditional, boring onion and celery in your tuna salad. I’m a big fan of multiple flavors that hit more than just two parts of the tongue. Instead try my tuna salad with something slightly spicy and salty with pepperoncini’s, sweet and tangy with amazing bread & butter pickles. I love using a little juice of both to keep it from being too dry and having to use too much mayo. I recently shared an easy Homemade Mayonnaise recipe that would go amazing with this, especially if you’re into controlling the ingredients that go into your food.

Enjoy this not just as a sandwich or wrap but with  your favorite tortilla or pita chips, celery for low carb, top it on slices of zucchini or yellow squash, even slice carrots diagonally to use as chips. As always, get creative!

  1. In a medium bowl break apart the chunks of tuna using a fork then add all the ingredients and mix together.

BALSAMIC CHICKEN SANDWICH

To make your grilling experience a little healthier by way of veggies simply add a few of your favorites to compliment the main attraction. Often times people do a cookout slapping whatever meat in between bread with a few wet condiments and call it a meal. Here’s a great sandwich that bursts with flavor and of course super easy to make. It only takes a few extra minutes to slice your onions and fresh mozzarella. Everything else can be applied to the sandwich without prep work. You can always make the spread days ahead of time, it’s much more flavorful that way anyways. Of course you can do this with any other meat you prefer and if you’re going low carb, wrap it up in some hearty lettuce to replace the bread. This easy balsamic marinade will go with practically anything. Enjoy!

BALSAMIC CHICKEN SANDWICH

  1. Marinate the chicken cutlets in a bowl with the balsamic vinegar, sugar, and sea salt for at least one hour or even over night if you like.
  2. In a small bowl combine the mayonnaise, sundried tomatoes, basil, garlic powder and pepper. Set asid
  3. Grill the chicken cutlets for about 2-3 minutes on each side over medium-high heat.
  4. Put some of the spread on one side of a hoagie roll and assemble it with the chicken, red onion, roasted bell pepper, mozzarella, and spinach.

ITALIAN STYLE SAUSAGE HOAGIE

Gourmet-style meals don’t always require a lot of time and this recipe proves it. In about 15-20 minutes you an make this for those days you want fantastic food but don’t want to go out. So I found these awesome Italian style chicken sausages by Aidells (Aidells.com) that taste amazing. You can find them at pretty much any major grocery store now. They may not be the cheapest sausage out there but you are paying for quality, taste and an improved ingredient list compared to many other brands. It’s not in the least bit dry nor does it taste bland like chicken actually does but what’s great about these is they aren’t overly greasy.

If you like a little more spicy than the average joe, then add more sriracha. Taste the gourmet mayo as you make it to get it exactly how you like it. Also, I love having a fresh component in my dishes which is why the fresh basil in the mayo goes amazing with the flavors in the sausage. And of course, who doesn’t like peppers and onions with their sausage? I mean, it’s a perfect pairing, you can’t go wrong and it’s a MUST. If you don’t like green bell peppers, use red instead. Heck! Add whatever you want, it’s yours!

ITALIAN STYLE SAUSAGE HOAGIE

  1. While grilling your sausages saute the bell pepper, onions, salt, and pepper in a skillet over medium-high heat until they soften and start to caramelize.
  2. Meanwhile in a small bowl, stir together the mayonnaisse, sriracha, garlic, and fresh chopped basil together. Set aside.
  3. To assemble, place a generous layer of the spicy basil mayo on one side of the hoagie roll, put the sausage in and top with peppers and onions.

HOMEMADE TARTAR SAUCE

Tartar sauce tends to have a bad reputation for not being a healthy sauce. I’m sure it doesn’t help being associated with greasy, deep fried fish ‘n chips but I’m telling you it doesn’t have to be unhealthy at all. Like anything, use it in moderation. With my recipe you have an option to health-ify it. Plain Greek yogurt isn’t only a healthy sour cream replacement, you’d be surprise what you can do with it. In this case it can replace the mayo if you like. It’s my mission to make everything full of flavor so that no one ever feels like they’re left unsatisfied.   1. Make the tartar sauce in advance by combining all the ingredients together in a bowl.
  2. Cover it and place in the fridge for at least 45 minutes.
